# How to Make It:

01 - Preheat oven to 400°F. Toss sliced mushrooms with olive oil, sea salt, and black pepper. Arrange on a parchment-lined baking sheet in a single layer. Roast for 15 to 20 minutes, flipping once, until golden and crisp. Set aside.
02 - In a large pot, heat olive oil over medium heat. Add diced onion, minced garlic, carrots, celery, and red bell pepper. Cook for 6 to 8 minutes until vegetables are softened.
03 - Stir in dried oregano, dried basil, and crushed red pepper flakes. Sauté for 1 minute until fragrant.
04 - Add tomato paste and stir to combine. Pour in crushed tomatoes and vegetable broth. Season with salt and pepper. Bring mixture to a boil, reduce heat, and simmer for 10 minutes.
05 - Add broken lasagne sheets to the pot. Simmer for 10 to 12 minutes, stirring occasionally, until pasta is tender.
06 - Blend in ricotta, mozzarella, and half of the Parmesan cheese. Stir until cheeses melt and the soup is creamy. Adjust seasoning as desired.
