05 - 2 cups sparkling water or club soda, chilled

01 - Combine strawberries, honey or agave, and lemon juice in blender. Blend until smooth consistency is achieved.
02 - Pour blended mixture through fine mesh sieve into bowl or pitcher, pressing gently with spoon to remove seeds and achieve silky texture.
03 - Divide strawberry purée evenly among 4 champagne flutes or drinking glasses, approximately 2 ounces per glass.
04 - Pour 1/2 cup chilled orange juice into each glass over strawberry purée layer.
05 - Add 1/2 cup sparkling water or club soda to each glass and stir gently to blend layers together.
06 - Top each mocktail with strawberry slice, orange slice, and mint sprig if desired. Serve immediately while chilled and effervescent.
