# How to Make It:

01 - Preheat oven to 400°F and line a baking sheet with parchment paper.
02 - In a mixing bowl, combine chopped shrimp, diced avocado, cheddar cheese, spring onions, garlic, cilantro if desired, lime juice, smoked paprika, black pepper, and salt. Gently fold until mixed.
03 - Roll out puff pastry sheet on a lightly floured surface. Slice into 8 equal rectangles, each measuring approximately 4 x 4.75 inches.
04 - Spoon 2–3 tablespoons of filling onto the center of each rectangle.
05 - Fold the pastry rectangles over the filling to create pockets. Seal edges by pressing with a fork.
06 - Place assembled pockets on the prepared baking sheet. Brush each with beaten egg for even browning.
07 - Transfer to oven and bake for 18–20 minutes until puffed and golden.
08 - Allow pockets to cool slightly on a wire rack before serving.
