# What you need:

→ Chia Pudding Base

01 - 1/2 cup chia seeds
02 - 2 cups unsweetened almond milk
03 - 2 tablespoons maple syrup or honey
04 - 1 teaspoon vanilla extract

→ Strawberry Layer

05 - 1 1/2 cups fresh strawberries, hulled
06 - 1 tablespoon fresh lemon juice
07 - 1 tablespoon maple syrup or honey

→ Matcha Layer

08 - 1/2 cup coconut yogurt or Greek yogurt
09 - 1 teaspoon matcha green tea powder
10 - 1 tablespoon maple syrup or honey

→ Toppings

11 - Fresh strawberries, sliced
12 - Toasted coconut flakes
13 - Granola

# How to Make It:

01 - In a medium bowl, whisk together chia seeds, almond milk, maple syrup, and vanilla extract. Stir well, let sit for 10 minutes, then whisk again to break up any clumps. Cover and refrigerate for at least 4 hours or overnight until thickened to a pudding consistency.
02 - In a blender, combine fresh strawberries, lemon juice, and maple syrup. Blend until completely smooth. Transfer to a container and refrigerate until ready to assemble.
03 - In a small bowl, whisk together coconut yogurt, matcha green tea powder, and maple syrup until smooth and evenly colored green throughout.
04 - Divide chia pudding evenly among four serving jars, creating the first layer on the bottom. Top with strawberry puree as the second layer, then spread matcha yogurt as the third layer. Repeat layers if desired for a deeper jar.
05 - Top each jar with fresh sliced strawberries, toasted coconut flakes, and granola as desired. Serve chilled immediately or cover and refrigerate until ready to enjoy.

# Expert Advice:

01 -
  • It tastes indulgent but requires zero cooking and barely any effort—perfect for when you want dessert energy at breakfast time.
  • The layers actually stay distinct and beautiful, which means every spoonful hits different textures and flavors.
  • It's naturally gluten-free and easily adaptable to whatever diet you're following without sacrificing a single bit of deliciousness.
02 -
  • If you don't whisk that chia mixture twice during the initial soaking, you'll end up with a gritty texture that no amount of chilling will fix—trust me, I learned this the hard way.
  • The matcha powder needs to be whisked really thoroughly or it settles into little green clumps at the bottom of that yogurt layer and looks like something went wrong.
03 -
  • Toast your coconut flakes in a dry pan for just a couple of minutes before using them—they go from pleasant to absolutely nutty and wonderful.
  • Make your strawberry puree slightly less sweet than you think you want it, because the sweetness of the chia pudding and yogurt layers will round everything out.
