# What you need:

→ Oats Base

01 - 1 cup old-fashioned rolled oats
02 - 1 cup unsweetened vanilla almond milk
03 - 1/2 cup Greek yogurt, plain or vanilla
04 - 2 tablespoons chia seeds
05 - 2 tablespoons maple syrup or honey
06 - 1 vanilla bean, split and seeds scraped, or 1 teaspoon pure vanilla extract
07 - 1/2 teaspoon instant espresso powder or 1/4 cup strong brewed coffee, cooled
08 - Pinch of salt

→ Topping

09 - 1/2 cup whipped cream
10 - 1 tablespoon dark chocolate shavings
11 - 1 tablespoon caramel sauce, optional
12 - 1 teaspoon instant espresso powder for dusting, optional

# How to Make It:

01 - In a medium bowl, combine oats, almond milk, Greek yogurt, chia seeds, maple syrup, vanilla bean seeds or extract, espresso powder or cooled coffee, and salt. Mix thoroughly until all ingredients are fully incorporated.
02 - Divide the oat mixture evenly between two clean jars or dessert glasses, filling each to about three-quarters full.
03 - Cover jars with lids or plastic wrap and refrigerate for at least 6 hours or overnight, allowing oats and chia seeds to absorb liquid and reach desired thickness.
04 - Before serving, stir the oat mixture thoroughly and taste for sweetness, adjusting maple syrup or honey if needed.
05 - Top each jar with whipped cream, chocolate shavings, caramel sauce drizzle if desired, and espresso powder dusting for enhanced coffee flavor.
06 - Serve chilled directly from the jar with a spoon.

# Expert Advice:

01 -
  • It tastes indulgent enough to satisfy a dessert craving but keeps you full through the morning.
  • No cooking required, just ten minutes of mixing and then the fridge does the work for you.
  • The vanilla bean and espresso combination hits that sweet and slightly bitter note that makes your taste buds sing.
02 -
  • The espresso powder needs to dissolve into the milk or yogurt, so don't just sprinkle it on top dry or you'll bite into bitter crystals that nobody asked for.
  • If your overnight oats seem too thick in the morning, stir in a splash more milk rather than adding it the night before, because chia seeds keep absorbing liquid and you might end up with soup.
03 -
  • If you want extra cold, freeze your jars for 30 minutes before serving, which keeps everything perfectly chilled and makes it feel extra luxurious.
  • The vanilla bean seeds matter more than you'd think, they give you those little flavor bursts that instant vanilla extract just can't match, so if you're going the vanilla bean route, don't skip scraping those pods.
