# How to Make It:

01 - Lay out sourdough slices and spread 1/2 tablespoon of softened butter on one side of each slice.
02 - Flip bread over and spread approximately 1 tablespoon of basil pesto on the unbuttered side of two slices. Evenly distribute mozzarella, fontina, and cheddar cheese over the pesto-covered slices.
03 - Top pesto and cheese-laden slices with remaining bread slices, ensuring buttered side faces outward.
04 - Heat a large nonstick skillet or griddle over medium heat until evenly warmed.
05 - Place assembled sandwiches in the skillet and cook 3-4 minutes per side, gently pressing with a spatula, until bread achieves golden-brown crispness and cheese melts completely.
06 - Transfer sandwiches to a plate and allow 1 minute cooling time. Slice diagonally and serve immediately while warm.

# Expert Advice:

01 -
  • The combination of three cheeses creates the most incredible melty texture that oozes out perfectly when you bite into it
  • Pesto adds such a bright fresh punch that cuts through all that rich cheese making each bite balanced not heavy
02 -
  • Medium low heat is your friend here going too hot will burn the bread before the cheese has time to melt into that perfect gooey state
  • Pressing gently with the spatula helps the bread make contact with the pan for even browning but dont smash down or youll squeeze out all the good stuff
03 -
  • Grate your own cheese instead of buying pre shredded which has anti caking agents that prevent smooth melting
  • Spread the pesto thinly going too thick makes the bread soggy and overwhelms the delicate cheese balance
