Ingredients
- Muffin Donut Base: 2 cups all-purpose flour, 1 cup granulated sugar, 2 tsp baking powder, 1/2 tsp baking soda, 1/4 tsp salt, 1/2 cup unsalted butter (melted), 2 large eggs, 3/4 cup whole milk, 1/2 cup brewed strong coffee (cooled), 1 tsp vanilla extract
- Coffee Cream Topping: 1 cup heavy cream (chilled), 3 tbsp powdered sugar, 2 tbsp instant coffee granules, 1/2 tsp vanilla extract
- Monster Decorations: Candy eyes (store-bought or homemade), assorted colored sprinkles, edible gel food coloring (optional)
Instructions
- Prepare Pan:
- Preheat the oven to 350°F (175°C). Grease a 12-cavity donut pan or muffin pan.
- Mix Dry Ingredients:
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- Mix Wet Ingredients:
- In another bowl, combine melted butter, eggs, milk, cooled coffee, and vanilla extract.
- Combine Mixtures:
- Pour the wet ingredients into the dry ingredients and mix gently until just combined. Do not overmix.
- Fill Pan:
- Spoon or pipe the batter evenly into the prepared donut or muffin pan, filling each cavity about 3/4 full.
- Bake:
- Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- Make Coffee Cream:
- Dissolve instant coffee granules in 1 tsp of hot water and let cool. In a chilled bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form. Gently fold in the dissolved coffee.
- Decorate:
- Once donuts are cool, pipe or spread the coffee cream generously on top. Decorate with candy eyes, sprinkles, and food coloring to create monster faces.
